Phew I think I need a lie down……….or some cheesecake………this was yummy !!!!

Have I mentioned lately it was my birthday and I was 47………?  The kids got me some lovely sparklers and I made the cheesecake.

It’s rare I don’t adapt a recipe, but I found this one from Janes Patisserie and it was amazing !!!!!!  It worked perfectly so no tweaking required.

No Bake Caramel Rolo Cheesecake

All I did differently was use salted caramel sauce to drizzle on the top.
